Lobster recipe: Lobster bread croutons


Lobster bread croutons - recipe by Kevin Mangeolles

This lobster crouton recipe may be a little fiddly, but is well worth the effort for a classy accompaniment to a seafood feast.

Ingredients
  • 50g of lobster coral
  • 250g of strong bread flour
  • 20ml of rapeseed oil
  • 8g of salt
  • 8g of yeast
  • 125ml of water

    How to make the Lobster bread croutons

    1. Place the oil and corals in a blender and blitz until the corals are incorporated into the oil
    2. Add the flour and salt to a mixing bowl and mix in the lobster oil
    3.Stir together the yeast and half of the water, then mix it into the oil and flour mix. Gradually stir in the rest of the water until a slightly sticky dough forms. Cover the bowl with clingfilm and set aside to prove until it has doubled in size
    4.Turn the dough out onto a work surface and knead slightly until it can fit into a loaf tin. Place the dough in the tin and set aside to prove for a second time
    5.Preheat the oven to 180°C/gas mark 4
    6.Once proven, bake in the oven for 35 - 40 minutes until nice and golden
    Baking bread
    When the bread is done, it will sound hollow when the bottom is tapped.
    7.Leave the bread to cool on a rack, then place in the freezer to freeze - this will make it easier to slice thinly
    8.Preheat the oven to 100°C/gas mark 1/4
    9.Cut the bread into very thin slices and lay out on lined baking tray. Bake in the oven for 5 - 8 minutes until dried and crispy. Serve immediately

Lobster recipe: Lobster Risotto Balls

Lobster Risotto Balls at That Meetball Place in Patchogue

- In a 4-5 qt sauce pan add 2 tbsp of olive oil or vegetable oil
- Add 1 medium red pepper, diced
- Add 2 stalks of celery, diced, and sauté for 2 minutes on medium heat, stirring often
- Set aside and allow to cool
- Add 5 cups of seafood stock or vegetable stock in a separate 4-5 qt sauce pan and bring to a boil
- Add 2 cups of arborio rice and stir

- Turn down to a simmer and stir often, making sure to scrape along the bottom of pan to prevent rice from sticking (the broth should not boil so rapidly that it evaporates, but is absorbed by the rice)
- Test the rice to make sure it is done by biting into a grain; it should not be crunchy nor should it be fully cooked

Lobster Roll Time: Willie T's Opens Today

Dupont Circle new seafood joint.

The restaurant has opened at 1511 Connecticut Ave. NW (former home of Marvelous Market) and is from Thompson Hospitality, the company behind such chains as American Tap Room and Austin Grill.

Willie T.'s will have lobster, crab and shrimp rolls, a Maine-themed design, reclaimed wood (naturally) and catering. There will be whoopie pies, too. No word yet on whether the brand will expand to other locations, but it seems likely given Thompson's track record.

The restaurant will be open for both lunch and dinner. Status: Opened at 11 a.m. 1511 Connecticut Ave. NW; website.

Chili Lobster with Texas Toast

Serves 4
4 half-pound cull lobsters, claws removed
2 tbsp. canola oil
1 tbsp. ginger, chopped
1 tbsp. garlic, chopped
1 cup lobster stock
2 tbsp. Sriracha
3 tbsp. unsalted butter
1 tbsp. light soy sauce
1 lime
1 tbsp. mint leaves, chopped
4 thick slices sourdough bread

Luke’s will be dishing its signature fresh, sustainable Maine lobster rolls, crab rolls, and shrimp rolls to the hungry masses at lunch time, and to the weary commuters starting their trek home in the evening. For the first time, Luke’s will even be open to the breakfast crowd, starting at 7 am. They’ll be selling direct trade cold-brew iced coffee from Vigilante, DC’s favorite local roaster, and are also experimenting with some delicious breakfast options sure to brighten up your walk to the office (you’ll have to visit to see what the test kitchen has come up with).

The team is honored and excited for the opportunity to hock its wares in such a historic site where so many great vendors, large and small, have gone before them. And since they travel back and forth between DC, New York, Philly, and Maine so often, they know as well as anyone how rewarding it will be to have a fantastic, fresh meal as your light at the end of the tunnel. Luke’s at Union Station Outdoor market will be open Monday through Saturday, 7 am to 7 pm, May 1 through October 31.

Thousands of people flock to Maine, year-round, for many different reasons. Festivals and events are a great way to attract visitors. The money they spend stays here and helps the local economy. 

A biathlon, a lobster festival, and a multinational gathering of the tribes might not seem to have a lot in common, but each brings hoards of visitors to Maine. The Maine Lobster Festival draws throngs to the Rockland waterfront each August for a five-day celebration of all things lobster.
