Lobster Sundays at Spoon

PARK CITIES—On May 11 (aka Mother's Day) John Tesar's Spoon will launch weekly Lobster Sundays. $55 plus tax and tip gets you a 1.5-pound lobster with steamer clams and broth, drawn butter, heirloom creamer potatoes, housemade kielbasa, tomato salad and dessert. Additionally, bottles of wine will be half-off.
COPPELL—Local pastry chef Joe Baker (aka @JoetheBaker) will begin hawking his wares at the Coppell Farmers Market every Saturday from 8 a.m.-noon.

Starting Mother’s Day, John Tesar at Spoon will be kicking off a weekly lobster bake featuring and 1.5 pound lobster served with steamer clams with broth and drawn butter, heirloom creamer potatoes, house made kielbasa and tomato salad. Desserts from Executive Pastry Chef David Collier will change weekly and seasonally.

Lobster Sunday will continue each week at a cost o $55 per person plus tax and gratuity. Wine is not including, but pairings will be available from Spoon’s sommelier.


Reservations can be made by calling 214.368.8220. Spoon is located at 8220 Westchester Drive and open Tuesday through Thursday 5-10 p.m., Friday and Saturday 5-11 p.m. and Sunday 5-8 p.m.

Lobster recipe: Oven Baked Butter-Poached Lobster

Ingredients :
  • 8 small frozen rock lobster tails,thawed
  • freshly squeezed lemon juice to taste
  • sea salt and freshly ground white pepper to taste
  • 4 tablespoons sweet butter
  • 1/4 cup chicken stock
  • 1/4 cup dry white wine
  • 1/4 cup dry white vermouth
  • 1/4 cup heavy cream


  1. Preheat oven to 400°F (204°C).
  2. Remove lobster meat from the shell and keep it all in one piece.

On May 24, the Chilliwack Mt. Cheam Rotary Club will host their annual Lobster Dinner & Auction at the Best Western Rainbow Country Inn.

This event is in support of the Chilliwack Children’s Foundation that assists financially needy children and youth with such things as education expenses, sports fees and equipment, speech therapy and dental treatments.

Five-kilo lobster ‘pardoned’ for new life at aquarium

A HUGE lobster weighing over five kilos has been ‘pardoned’ from the cook pot to instead live out its days at Benalmádena’s Sea-Life aquarium.

In a nod to the Semana Santa tradition of religious confraternities, or ‘cofradías’, pardoning an inmate for early release from prison, ‘Pinzas’ (‘Claws’) the lobster last week received his pardon from “the recently created ‘cofradía del bogavante’,  formed by lobsters, crabs and sea-horses,” said Sea-Life in a tongue-in-claw written statement.

Ingredients
  • 2 pounds russet potatoes, peeled and baked at 350°F for 1 hour (potatoes will not be completely cooked)
  • 3⁄4 cup sour cream
  • 3⁄4 cup shredded swiss cheese (about 6 ounces)
  • 1 tablespoon lobster base (available online, in specialty stores, or the sauce section of your grocery)
  • Pinch of freshly ground black pepper
  • 1 cup diced cooked lobster meat
  • 2 tablespoons minced fresh chives
  • 3⁄4 cup instant potato flakes, divided
  • 3 tablespoons all-purpose flour
  • 1 whole egg, beaten with 1 teaspoon water
  • 2 quarts peanut oil
  • sea salt
  • orange chili sauce (see note), for serving
Orange Chili Sauce
  • 1 cup orange marmalade, puréed until smooth
  • 1 tablespoon Thai chili sauce
"Bar-ton Blue" dip, for serving
  • 1 1⁄4 cups mayonnaise
  • 1⁄4 cup grated Parmesan cheese
  • 2 tablespoons freshly squeezed lemon juice
  • 2 teaspoons Worcestershire sauce
  • 3 tablespoons chopped fresh herbs, such as a mixture of oregano and parsley
