Ingredients2 1 1⁄4-1 1⁄2 pound lobster

1 cup chicken stock or water
1 shallot - minced
2 clove garlic - minced
2 ounces extra virgin olive oil
1 14 ounce can tomato - squeezed dry and chopped very fine
4 ounces white wine
1 ounce white wine vinegar
6 ounces white lobster or chicken stock
2 tablespoons butter
1 pound spaghetti
2 tablespoons minced herbs - preferably tarragon, chervil, parsley, dill and/or chives

Lobster recipe: LOBSTER FETTUCCINE WITH PESTO WHITE WINE BUTTER SAUCE
LOBSTER FETTUCCINE WITH PESTO WHITE WINE BUTTER SAUCE RECIPE
Ingredients:1-lb Fettuccine
1- lb Fresh Lobster Meat
½ – Cup White Wine (something you would enjoy drinking)
½- Cup Italian parsley
2 – Table Spoons Chopped garlic
½- Jar of Capers
2 – Table Spoons of Butter
1 ½- Cups of hot pasta water
2 – Table Spoons of PESTO (Jared is just fine)
How to cook the Lobster recipe:
Boil pasta until Al Dente 12-13 minutes
Blanche Broccoli until tender
(Note if the mixture is to dry, add a splash of the pasta water that you have set aside, to loosen the dish up. Still has a snap to it.)
Saute garlic with lobster for 3-4 minutes
Deglaze lobster and garlic with the wine and butter garlic, pasta, broccoli capers, pesto and parsley in one pan.
Then toss together lobster, Drizzle with EVOO
Top with roughly chopped basil and Parmesan cheese and enjoy.

Lobster Rolls Recipe
Ingredients
Lobster
Mayo
Lemon
Celery
Celery Salt
Hot Dog Rolls
Optional: fresh basil, paprika, roe
How to cook the Lobster rools
- Boil the lobsters in a non-traumatic way for about 8 to 12 minutes, or until bright red. Remove from the pot and after they’ve sufficiently cooled, crack and remove the meat. Place the meat in a large bowl. Tear the meat into small chunks.
- Add several scant tablespoons of mayo to the bowl and mix with your fingers so that the mayo lightly coats the chunks of lobster meat. If you are the sort of cook that the author’s mother is, you will speak to your lobster as you do this: That’s right! There we go! That’s the ticket! This is understood to improve flavor and integration. DO NOT overdress … just enough mayo to lightly coat the lobster meat is sufficient!
- Add the juice of one (or 1/2) lemon depending on how much lobster you’re using—don’t let any seeds sneak in. Slice two to four ribs of celery (again, depending on how much lobster) crosswise, then halve each slice and add to the bowl
- Add celery salt to taste. Be sure to add all components gradually and taste as you go so you don’t over salt.
- Scoop the lobster mixture on toasted hot dog rolls. Some people like to add a tiny bit of fresh shredded basil and a sprinkle of paprika, if that kind of thing is your kind of thing. This is not traditional, but it can be delicious. This is, of course, up to you.…
- If you are lucky enough to get a lady lobster with red roe inside, crumble the roe over the rolls as garnish and serve.

Lobster recipe: Lobster With Butter and Wine
Ingredients:
12 ounces raw lobster meat
Live 1 ½ lb. Maine lobster per person | Maine Attraction Jumbo Gift Certificate for Two Live 1 ½ lb. Maine lobster per person, in a 19 qt. lobster pot. Comes with crackers and forks, bibs, wet-naps and napkins. |
3 Tablespoons olive oil
3 Tablespoons butter
1/2 cup white wine
1 lemon
A few large handfuls of baby spinach (It cooks down a lot!)
How to cook Lobster With Butter and Wine:
In a skillet, heat oil and butter. Add lobster meat and cook 2 minutes on each side. Add wine and let reduce a bit. Squeeze in the juice from the lemon. Add salt and pepper to taste. Add the spinach and stir into the sauce. Serve over pasta or brown rice.
