Lobster recipe: Lobster Rollups

Lobster Rollups Recipe

Ingredients


2 cups cold (cooked) Maine lobster meat

1-2 Tablespoons scallions, thinly sliced

1 cup Swiss cheese, shredded

1/2 cup mayonnaise

2 teaspoons fresh lemon juice

2 teaspoons salt



Dash pepper

4
flour tortillas

4 slices bacon, cooked



Fresh red or green leaf lettuce torn into pieces

1
tomato, chopped



How to cook  Lobster Rollups:


Combine lobster meat, scallions, cheese, mayonnaise, lemon juice, salt and pepper.

Warm flour tortillas in microwave between damp paper towels before assembling.

Spread lobster mixture evenly over each tortilla.

Place one slice of bacon, a few lettuce leaves and chopped tomatoes over lobster mixture.

Roll tortillas and serve.
