Lobster Rollups Recipe
Ingredients
2 | cups | cold (cooked) Maine lobster meat | |
1-2 | Tablespoons | scallions, thinly sliced | |
1 | cup | Swiss cheese, shredded | |
1/2 | cup | mayonnaise | |
2 | teaspoons | fresh lemon juice | |
2 | teaspoons | salt | |
Dash pepper | |||
4 | flour tortillas | ||
4 | slices | bacon, cooked | |
Fresh red or green leaf lettuce torn into pieces | |||
1 | tomato, chopped |
How to cook Lobster Rollups:
Combine lobster meat, scallions, cheese, mayonnaise, lemon juice, salt and pepper.
Warm flour tortillas in microwave between damp paper towels before assembling.
Spread lobster mixture evenly over each tortilla.
Place one slice of bacon, a few lettuce leaves and chopped tomatoes over lobster mixture.
Roll tortillas and serve.
