Ingredients: |
3 T. butter
3 cloves garlic, minced 1 medium yellow onion, minced 1/4 c. brandy 2 T. flour, plus more 1 3/4 c. heavy cream 1 lb. raw lobster meat cut into 3/4" pieces Whale of a Tail 12 Colossal Tails Maine/Canadian lobster tails are more sweet and tender than any warm-water tail. 1/8 tsp. nutmeg fresh ground pepper to taste 14 oz. puff pastry 1 beaten egg |

Preheat oven to 425 F
Melt butter in a large saucepan over med-high heat Add garlic and onion and cook til golden about 7 minutes Add brandy and cook til reduced by half about 2 minutes Whisk in flour and cook for 2 minutes Add cream and bring to a boil, stirring occasionally til sauce is slightly thickened about 4 minutes Stir in nutmeg, salt and pepper Stir in lobster meat Divide lobster mix between 4 ovenproof cups On a lightly floured surface roll out the pastry to make a 14" square Cut out four 4 1/2" circles Brush edges of cups with the egg, place 1 circle over each and press to seal Brush pastry with egg and bake until golden brown about 20-25 minutes Serve |
