It appears frequently at chef casual seafood shacks and fine dining seafood operators as a lunch or less expensive – comparatively speaking – menu option. Fast casual operators have adopted the lobster roll as a “new” premium sandwich option. Both Panera Bread and Au Bon Pain have added lobster rolls (or lobster roll-inspired sandwiches featuring a seafood mix) to the menu.
